The everyday summer salad

Ingredients

  • 4 cups tender greens
  • 2 cups chopped summer vegetables
  • 1 cup fresh herbs
  • 3 tablespoons olive oil
  • 1 tablespoon lemon juice
  • 1 teaspoon Dijon mustard
  • Salt and black pepper

Method

  1. Wash and dry the greens and herbs well.
  2. Whisk the oil, lemon, mustard, salt, and pepper.
  3. Toss just before serving and taste for brightness.
